Recently I received an injury and now I’m out of training): However, I’m not out of the game. My friend, Brooke, wants me to help her prep for her very first show! So i’ll still be posting on here fun things you an do and fun activities!
While I’m here I’ll post the fun recipe for yummy turkey muffins!
Things you need:
bowl, muffin/cupcake tin, cooking spray
Muffin:
1 package of lean ground turkey
5 eggwhites
1/4 cup chopped onions and peppers
1/4 cup of spinach
Italian seasonings, Garlic seasoning
Icing:
Sweet potato
Almond milk
butter
First preheat your over to 400. Then I prepare my turkey. I put the package in a bowl, dump all my muffin ingredients int the same bowl and just mix it all together (I usually use my hands). after thats all mixed together, start making nice sized balls and place them in the pre sprayed cupcake/muffin tin. Place them in the oven, cook for 20 minutes and then flip them over, then another ten minutes or until they’re done.
Next is your icing(you can make these at the same time. doesn’t matter) You can peal your sweet potato or not, totally up to you. Also you choice is to boil or steam it. I usually steam it because it cooks faster that way. so wrap it up in plastic wrap and put it in the microwave for 2 minutes. then take it out and put it in a pot on top of the stove and start mashing, make sure you slowly add your almond milk to the potato so it soaks it in. The almond milk will make it looser, more icing like. when you get the consistency that like, let it cool! Once it’s cool, i put it all into a sandwich baggie and wait for my turkey muffins to be done.
When the turkey muffins are done, take them out and place them on a plate. Take your mashed sweet potato icing and start squeezing right on top! And walahh, you have yourself a nice new muffin meal!
